Cover the bowl with a clean kitchen towel or plastic wrap.
Let the dough rise at room temperature for 8-12 hours or overnight, until it has doubled in size and looks bubbly.
4. Shape and Knead:
Lightly flour your hands and work surface.
Carefully shape the dough into a round loaf.
Place on a floured baking sheet or well-floured loaf pan.
Cover and let rise for about 1-2 hours, until the dough has risen.
5. Bake:
Preheat the oven to 230°C.
Also preheat a baking dish or a heavy-bottomed baking dish.
Carefully transfer the dough, lined with parchment paper, to a hot ovenproof dish and cover with a lid.
Bake covered for 30 minutes, then remove the lid and bake for another 10-15 minutes, until the crust is deep golden brown.
6. Cool:
Remove the bread from the oven and let it cool completely on a wire rack before slicing.
